Luteal Phase tahini banana bread
This is my favorite bread to make, and making it actually gets me excited to be in the Luteal Phase of my cycle!!
In seed cycling your menstrual cycle, sesame seeds and sunflower seeds are the most beneficial to our hormones during the Luteal Phase. During the luteal phase, lignans — a type of polyphenol — in sesame are supposed to inhibit estrogen levels from increasing too much. Meanwhile, the vitamin E in sunflower seeds is thought to help boost progesterone levels. Olive oil is thought to have hormone-balancing, anti-inflammatory effects that can prevent neurotransmitter dysfunction. It may also defend against depression and anxiety. Bananas improve your digestion and heart health, thanks to their fiber and antioxidant content. Plus, they may support weight loss because they're relatively low in calories, nutrient-dense, and filling.
Ingredients
1 1/4 cups of ripe banana, mashed
1/2 cup non-dairy milk
1/4 cup pure maple syrup
1/4 cup tahini
1/4 cup cold-pressed olive oil
2 cups of flour (almond, spelt, GF, whole wheat)
1 tsp cinnamon
1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 cup of sesame seeds
Instructions
Preheat the oven to 360 degrees.
In a large mixing bowl add banana, milk, maple syrup, tahini, olive oil with a spoon, whisk, or immersion wand. Some chunks are fine.
mix in all the dry ingredients.
Grease a bread tin or using parchment paper (I do both!), then pour batter into tin.
Bake for 50-55 minutes. The top will be slightly golden and you can test with a knife to be sure the center is cooked through.
Cool for 10 minutes and enjoy!!
